Acilpiruvatna hidrolaza (EC 3.7.1.5) je enzim sa sistematskim imenom 3-acilpiruvat acilhidrolaza.[1] Ovaj enzim katalizuje sledeću hemijsku reakciju

3-acilpiruvat + H2O {\displaystyle \rightleftharpoons } karboksilat + piruvat

Ovaj enzhim deluje na formilpiruvat, 2,4-dioksopentanoat, 2,4-dioksoheksanoat i 2,4-dioksoheptanoat.
