Cerevisin (EC 3.4.21.48, proteinaza yscB, proteinaza B pekarskog kvasca, proteinaza pivskog kvasca, peptidaza beta) je enzim.[1][2][3][4] Ovaj enzim katalizuje sledeću hemijsku reakciju
- Hidroliza proteina sa širokom specifičnošću, i Bz-Arg-OEt Ac-Tyr-Oet. Ne dolazi do hidrolize peptidnih amida
Ovaj enzim je izolovan iz kvasca Saccharomyces cerevisiae.
